My absolute favorite healthy recipe is a Summer Quinoa Bowl, packed with vibrant, seasonal ingredients straight from the local farmers market.

It’s a perfect, nutrient-dense meal that comes together in under 30 minutes.

Method:
Cook one cup of quinoa according to package instructions and let it cool.

In a large bowl, combine the quinoa with diced heirloom tomatoes, fresh sweet corn kernels, a finely chopped cucumber, and a handful of chopped basil.

For the protein, add one can of rinsed chickpeas. Whisk together the juice of one lemon, two tablespoons of extra virgin olive oil, salt, and pepper.

Toss the salad with the dressing and enjoy immediately for the freshest flavor!
