Method:
Cook one cup of quinoa according to package instructions and let it cool.
In a large bowl, combine the quinoa with diced heirloom tomatoes, fresh sweet corn kernels, a finely chopped cucumber, and a handful of chopped basil.
For the protein, add one can of rinsed chickpeas. Whisk together the juice of one lemon, two tablespoons of extra virgin olive oil, salt, and pepper.
